Avocado Dessert Recipe









This super avocado dessert recipe is scrumptious, with its avocado and lime taste and light meringue topping it is the ideal treat for any occasion and will go down well with family and friend alike. The recipe can be completed in under an hour . Enjoy.






Avocado Lime Pie with Meringue

1 Avocado; pureed

1/2 c Fresh lime juice

1 1/2 c Sugar

1/3 c Cornstarch

1/4 ts Salt

1 1/2 c Water

4 Eggs yolks; lightly beaten

1 tb Grated lime peel

1 9-inch baked pie shell

MERINGUE

4 Egg whites

1/4 ts Cream of tartar

1/8 ts Salt

1/2 c Sugar



Puree avocado and lime juice.

In saucepan blend: sugar, cornstarch and salt; gradually stir in water.

Stir to boil over medium heat and boil ½ minute.

Gradually beat half of hot mixture into egg yolks; then return to saucepan. Stir and boil 1 minute longer. Remove from heat and stir in lime peel. Blend in avocado puree.

Turn into pie shell.

Top with Meringue. Bake in 350^ (moderate) oven 10 to 15 minutes until Golden brown.

MERINGUE:

Beat 4 egg whites (at room temperature), 1/4 teaspoon cream of tartar and 1/8 teaspoon salt until foamy.

Continue beating, gradually adding 1/2 cup sugar, until stiff, but not dry.
