Beef Broth Recipe with Golden Roll Slices

1 carrot

1 turnip(small)

1 onion

Salt and pepper

˝ small cabbage

A sprig of parsley

1 clove garlic (optional)

1 oz butter or margarine

1 qt brown stock

A few chives

Grated nutmeg

6 thin slices of French bread

Scrub and peel the carrot and turnip, peel the onion and crush the garlic(if used). Slice the vegetables in thin rounds. Melt the fat and in it cook the vegetables gently for 10 minutes With a lid on the pan. Add the stock (boiling) and ˝ teaspoon salt. Simmer the whole for 30 mins. Meanwhile wash the cabbage, shred it finely and chop the parsley and Chives. Add the cabbage to the broth and simmer for 20 min longer; then add seasoning, alittle grated nutmeg , and the chopped parsley and chives. Toast or bake the slices of French bread till golden brown and put one in each soup plate or cup; pour the hot soup over them, if liked grated cheese may be handed round with this soup

Serves 4 - 6 people
