The bread we eat every day as a stable food is leavened or raised, usually with yeast, to make it light and porous. Some breads called quick breads are raised with baking powder, eggs or similar ingredients, and others, such as crisp breads, are not leavened at all.

We eat mostly white bread, made from wheat without its husk. Wholemeal bread is made from wheat flour made from the whole of the wheat grain endosperm.

White flour is enriched however with iron, calcium and two B vitamins. For bread-making a strong flour with a lot of gluten (protein) is needed to make it cohesive and elastic and to give a good volume.

Wheat contains more gluten than any other grain, so when other grains are used for bread flour, they are mixed with wheat. Maize, potato and rye flours are the most commonly used ones today.

Raising bread dough with yeast is not as difficult as many people think. You can either use fresh yeast, bought in a small cake, or dried yeast in powder form. Dried yeast lasts a long time, but fresh yeast must be used while fresh.

This yeast should have a slightly beery smell, and be a fresh putty colour. Both forms are used in the same way, but you need only half as much dried as fresh yeast to raise a given amount of flour, and dried yeast must be reconstituted in some warm liquid first.

Yeast raises dough by producing carbon dioxide gas. It is a plant, and therefore requires food, warmth and moisture to do this. Sugar is a food for yeast and a little sugar is often added to the yeast liquid. Since cold slows down the working of the yeast, its raising action can be slowed by chilling in the fridge, and can be speeded up by gentle warmth. To much warmth makes it smell beery in the finished bread.
