Honey Pork Recipe And Sherry Sauce

Pork Recipe facts

Most joints of Pork can be Roasted ,though the prime cuts such as leg, loin and spare rib are usually the best as they have a larger proportion of lean.

It is important that pork should be very well cooked-it should never be served underdone.

As pork is very rich, serve with a sharp sauce as the Sherry , and use a thin gravy.

If the skin has been left on the pork, be sure that it is scored with a Sharp knife before cooking otherwise it will be difficult to carve, as the cooked crackling becomes very crisp.




Honey Pork with Sherry Sauce

500g pork fillets

1 tbs tomato sauce

1 tbs honey

2 tsp soy sauce

750g broccoli, cut into floweret's

½ tsp Five Spice Powder

1 tbs honey, extra

Sauce

½ cup chicken stock

1 tbs dry sherry

1 tsp sugar

½ tsp oyster sauce

2 tsp cornflour

In a bowl combine the tomato sauce with the honey, five spice powder & the soy sauce. Add pork fillets & turn to coat them evenly. Cover & refrigerate for at least an hour. Drain pork & place in a baking dish. Bake in mod oven for 20 mins. Brush fillets with extra honey on both sides, bake a further 10 mins. Cook broccoli by steaming for 3 mins. Place broccoli in a serving dish. Cut fillets into thick slices & place on top of broccoli. In a saucepan, combine the sauce ingredients, stir over medium heat until sauce boils & thickens.
