Pancake Mix Recipe

This pancake mix recipe is light and does not need to stand. It’s pretty foolproof.

Ingredients

4 oz plain flour
A pinch of salt
2 large eggs
7 fl oz milk
2 tablespoons melted butter
A little extra butter for cooking

Sieve the flour and salt into a large mixing bowl. Make a well in the centre of the flour and break the eggs into it. Start to whisk the eggs beginning to incorporate bits of flour from around the edges as you do so. Start to add small quantities of the milk and water. Ignore any lumps because they will disappear. Whisk until the batter is smooth and the consistency is thin.

When you are ready to cook add the 2 tablespoons of butter to the mix. Add some butter to the pan to stop sticking. Get the pan really hot then turn the heat down to medium. Use a ladle to add about 3 tablespoons of batter to the pan.
