Chicken Tacos

Ingredients:

4 cups cooked, shredded chicken

1 small onion, chopped

½ bell pepper, chopped

1 ½ tsp salt

1/8 tsp pepper

1 ½ tsp chili powder

8 oz. can tomato sauce

1 cup water

12 hard or soft taco shells

Shredded lettuce

Chopped tomatoes

Shredded cheese

Sauté chicken, onion, and bell pepper in a small amount of oil until vegetables are tender. Add spices, tomato sauce, and water and bring the mixture to a boil. Reduce heat and simmer covered for about 15 minutes. Uncover and continue to cook until most of the liquid is absorbed.

Heat shells according to directions and fill with about ½ cup of chicken mixture. Top with lettuce, tomato, and cheese.

Spaghetti and Meatballs

Ingredients:

1 lb. ground pork

1 cup Italian bread crumbs

1 tsp salt

1/8 tsp pepper

1 tsp Italian seasoning

1/3 cup milk

Spaghetti sauce

Cooked spaghetti

Soak bread crumbs in milk and mix in pork, egg, and seasonings. Combine all ingredients until well blended and form small meatballs from the mixture. Brown the meatballs in a skillet over medium heat until no longer pink. Drain grease, add sauce, and heat through. Serve over noodles with Parmesan cheese.

White Chili

Ingredients:

1 lb chicken breasts, shredded or diced (about 4 cups)

1 medium onion, chopped ½ tsp oregano

1 tsp cumin

¼ tsp cayenne pepper

1 can tomatoes

1 can diced green chilis

1 can chicken broth

2 cans white beans

Sauté chicken and onion over medium heat in 1 tsp olive oil until onion is tender. Combine all ingredients in a large pot and simmer for about 20 minutes. Serve in bowls garnished with sour cream, cheese, and tortilla strips.
